Butterfinger Pie in a Jar


Pie Town flyer - Turn your frown upside down

Welcome to Pie Town, and to day two of the Witch's Tea Party. Thanks so much to Brigitte for inviting us to participate.

At Pie Town, we now offer pies in jars -- perfect for weddings, parties, and other events. But if you want to try making them at home, here's an easy recipe!

Butterfinger Pie in a Jar

Ingredients

6 whole graham crackers

3 T brown sugar

3 T melted butter

1 8 oz. package of cream cheese - room temperature

1 C powdered sugar

1/2 C creamy peanut butter

1/2 tsp vanilla

1 C whipped cream

1 regular sized Butterfinger candy bar

Instructions

Preheat oven to 350 F.

Powder the graham crackers in a food processor. Add 1 T of brown sugar and melted butter. Pack roughly 1 1/2 T of cracker mixture into bottoms of 12, 4-ounce jelly jars and set on a baking sheet. Bake for 6 minutes.

Cool completely before going on to the next step!

In a large bowl (because this splatters), beat cream cheese until smooth. Add powdered sugar and remaining 2 T brown sugar and beat until incorporated. Add peanut butter and vanilla and beat until everything is completely mixed together. Add whipped cream and beat at a low speed for 30 seconds.

Crush candy bar to crumbs (this is easiest if you crush it while it's still inside the wrapper).

Divide candy bar crumbs in half. Sprinkle a small amount of candy bar crumbs from the first portion over crusts. Divide the peanut butter filling and add to jars. Sprinkle with the remaining candy bar crumbs.

Chill jars for at least 2 hours. Top with heaping tablespoon of whipped cream before serving.

Note: You can use larger jars and get fewer pies-in-a-jar, but 4-ounce jars are a lot easier to fill neatly than 8-ounce jars.
